
Pepper Lamb Steaks
2 Cloves Garlic crushed
2 tablespoons cracked black pepper
2 teaspoons finely chopped fresh thyme
2 teaspoons finely grated lemon rind
1 tablespoon plain flour
8 Lamb steaks
1 tablespoon olive oil
Combine garlic, pepper, thyme, rind and flour in bowl. Brush lamb with a little oil and press on the mix. Leave to stand a few hours or overnight.
Cook on a heated BBQ or griddle uncovered until cooked as desired.
This is great served with a savory Tomato or plum and apple jam. The sweetness of the jams offset the pepper very well.
